Baked Halibut w/ Pineapple Salsa
Serving size 2
Cook/ Prep time approximately 30 minutes
INGREDIENTS
▪ 1 tablespoon butter (soften)
▪ 5 tablespoon avocado oil
▪ 1 tablespoon All Things Seafood seasoning
▪ 2 4-6 oz. Halibut fillets
▪ 1 lemon (squeezed)
▪ 1 cup chopped cilantro
▪ 1/2 cup chopped green onion
▪ 1/2 cup chopped green bell pepper
▪ 1/2 cup chopped tomato
▪ 1 cup chopped pineapple
▪ 1/2 teaspoon ground white pepper
INSTRUCTIONS
Preheat oven to 350 degrees
1.In a small bowl combine seafood seasoning and butter. Stir until mixture forms into a paste.
2.Coat all sides of Halibut fillets with paste mixture.
3.In a iron skillet on medium/high heat add 3 tablespoons oil.
4.Cook Halibut 2 minutes per side.
5.Rotate skillet to oven. Bake for 6 minutes, or until it flakes easily with a fork.
6.Scoop any juices from the bottom of the pan over the fillets.
Pineapple Salsa
1.In large bowl combine pineapple, green onion, green bell pepper, cilantro, tomato, lemon juice, 3 tablespoons oil and white pepper.2.Mix well then set aside.

Air Fried Lump Crab Balls w/ Zesty Cream Sauce

Cook/ Prep time approximately 40 minutes
INGREDIENTS
• 1 large egg
• 1 tablespoon melted butter of choice
• 1 tablespoon fresh lemon juice (also 1 lemon “wedge” for garnish)
• 1/4 cup mayonnaise of choice
• 1 teaspoon freshly chopped cilantro
• 1/4 cup chopped green pepper
• 1/4 cup chopped mini sweet pepper
• 1 teaspoon chopped scallions
• 1 tablespoon honey mustard
• 2 teaspoons Worcestershire sauce
• 1 teaspoon All Things Seafood seasoning
• 1 teaspoon ground white pepper
• 8 oz. fresh lump crab meat
• 1/2 cup panko breadcrumbs
INGREDIENTS – Sauce
• 1 cup heavy whipping cream
• 1 tablespoon butter of choice
• 2 tablespoons fresh lemon juice
• 3/4 cup dry white wine of choice
• 2 tablespoons chopped scallions
• 1 tablespoon Garlic Madness seasoning
• 1 teaspoon minced garlic
• 1 teaspoon ground white pepper
INSTRUCTIONS
Preheat air fryer to 360 degrees
- In a large bowl combine egg, melted butter, fresh lemon juice, mayonnaise, freshly chopped cilantro, green pepper, mini sweet pepper, scallions, honey mustard, Worcestershire sauce, All Things Seafood seasoning and ground white pepper (whisk well).
- In same bowl add lump crab meat and bread crumbs. Mix with hand until blended well. Cover and refrigerator for 10 minutes.
- Shape crab meat mixture into 2/3 inch thick balls.
- Spray air fryer rack with nonstick cooking oil. Place crab balls onto rack and air fry for 7 minutes. Rotate and air fry for additional 7 minutes.
ZESTY CREAM SAUCE
- In a medium pot add heavy whipping cream, butter, fresh lemon juice, dry white wine, scallions, Garlic Madness seasoning, minced garlic and ground white pepper.
- Cooking on medium/high heat for 15 minutes or until sauce thickens. Stir occasionally.
